  • 12 ounces spaghetti
  • 3 cups cooked chicken shredded
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 0.5 cup chicken broth
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook spaghetti until al dente, then drain.
  3. Sauté onion and bell pepper in butter until softened.
  4. Add garlic and cook briefly.
  5. Mix soups, sour cream, chicken broth, and seasonings in a large bowl.
  6. Fold in cooked chicken, vegetables, spaghetti, and part of the cheese.
  7. Transfer mixture into a greased casserole dish.
  8. Top with remaining cheddar and mozzarella cheese.
  9. Bake uncovered for 25-30 minutes until bubbly.
  10. Garnish with parsley and serve warm.

Notes

This casserole freezes well and can be assembled ahead of time for easy weeknight dinners.
