Ingredients
  

Filling
  • 2 cups cooked shredded chicken
  • 1 cup black beans drained
  • 1 cup corn thawed
  • 0.5 cup red bell pepper diced
  • 0.5 cup spinach chopped
  • 1.5 cups Monterey Jack cheese shredded
Assembly
  • 8 flour tortillas large
  • 1 egg for sealing
  • vegetable oil for frying

Equipment

  • Mixing bowl
  • Deep skillet
  • Tongs
  • Paper towels

Method
 

  1. Mix all filling ingredients together.
  2. Place filling in tortilla and roll tightly.
  3. Seal with egg wash.
  4. Heat oil and fry until golden brown.
  5. Slice and serve with dipping sauce.

Notes

Can be baked or air fried for a lighter version. Freeze before cooking for make-ahead convenience.
