Ingredients
  

Dressing Base
  • 2 chipotle peppers in adobo sauce roughly chopped
  • 2 tbsp adobo sauce from the can
  • 0.25 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1 clove garlic
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp water optional for thinning

Method
 

  1. Add chipotle peppers, adobo sauce, vinegar, lime juice, honey, garlic, cumin, paprika, salt, and pepper to a blender.
  2. Blend the ingredients until smooth and well combined.
  3. Slowly drizzle in olive oil while blending to create a smooth emulsion.
  4. Add water if needed to reach desired consistency.
  5. Taste and adjust seasoning with additional salt, honey, or lime juice.
  6. Transfer the dressing to a jar and refrigerate for at least 20 minutes.
  7. Shake well before serving.

Notes

Store the vinaigrette in a sealed jar in the refrigerator for up to one week. Shake well before each use.
