Ingredients
  

  • 2 cups cooked rice
  • 2 tbsp olive oil
  • 1 lime zest from 1 lime
  • 2 lime juice fresh
  • 0.5 cup fresh cilantro chopped
  • 2 avocados sliced
  • 2 chicken breasts cooked and sliced

Method
 

  1. Mix warm rice with olive oil, lime zest, lime juice, cilantro, salt, and pepper.
  2. Warm chicken in skillet and coat with glaze and seasonings.
  3. Layer rice, avocado, and chicken into a mold.
  4. Invert onto a plate and garnish before serving.

Notes

For a vegan version, substitute glazed tofu or chickpeas for chicken.
