Ingredients
  

Stuffed Apples
  • 4 large apples cored
  • 1 cup rolled oats
  • 0.25 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 cup chopped walnuts
  • 3 tbsp unsalted butter melted
  • 0.25 cup raisins optional
  • 1 tsp vanilla extract
Vanilla Custard Sauce
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 4 egg yolks large
  • 0.5 cup granulated sugar
  • 2 tsp vanilla extract
  • pinch salt

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Core the apples, creating a hollow cavity.
  3. Mix oats, brown sugar, cinnamon, nutmeg, nuts, raisins, melted butter, and vanilla.
  4. Stuff each apple with the oatmeal mixture.
  5. Place apples in a greased baking dish, add ¼ cup water, bake 35–40 minutes.
  6. For custard: heat milk and cream until steaming.
  7. Whisk egg yolks with sugar until pale. Temper with hot milk mixture.
  8. Return to saucepan, cook on low until thickened. Stir in vanilla and salt.
  9. Serve baked apples with warm custard poured over.

Notes

Store leftovers in refrigerator up to 2 days. Reheat gently before serving.
