Ingredients
  

Blondie Batter
  • 1/2 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 2 eggs large
  • 2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
Topping
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan and line with parchment paper.
  2. Whisk melted butter and brown sugar until smooth. Add eggs and vanilla, whisk until combined.
  3. In a separate bowl, combine flour, baking powder, salt, and cinnamon. Fold into wet ingredients.
  4. Spread batter evenly in prepared pan.
  5. Mix granulated sugar with cinnamon and sprinkle evenly on top.
  6. Bake 25–28 minutes until a toothpick comes out clean. Let cool completely on a wire rack.
  7. Cut into squares and serve.

Notes

Do not overbake to keep blondies soft. Optional mix-ins can include nuts or chocolate chips.
