Ingredients
  

  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup coconut milk full-fat
  • 0.5 cup coconut cream
  • 1 egg large
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract

Method
 

  1. Whisk dry ingredients together in a large bowl.
  2. Mix coconut milk, coconut cream, egg, oil, and vanilla in another bowl.
  3. Combine wet and dry ingredients gently until just mixed.
  4. Rest batter for 5 minutes.
  5. Cook pancakes on a greased skillet over medium heat until golden on both sides.

Notes

Serve warm with maple syrup, fruit, or toasted coconut. Batter should not be overmixed.
