Ingredients
  

Soup Base
  • 2 cups vegetable broth
  • 1 can coconut milk full-fat
  • 2 tbsp curry paste red or yellow
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp soy sauce
  • 1 tbsp lime juice fresh
Dumplings
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2 tbsp oil neutral
  • 0.5 cup water
  • 2 tbsp scallions chopped

Method
 

  1. Sauté garlic, ginger, and onion in oil until fragrant.
  2. Stir in curry paste and cook briefly.
  3. Add broth and coconut milk and simmer.
  4. Mix dumpling ingredients into a soft dough.
  5. Drop spoonfuls of dough into simmering soup.
  6. Cover and cook until dumplings are puffed.
  7. Finish with lime juice and cilantro.
