Colombian Arepas con Queso

Traditional Colombian corn cakes filled with melted cheese, crispy on the outside and soft inside, perfect for breakfast or snacks.

Ingredients
  

Arepa Dough
  • 2 cups pre-cooked white cornmeal masarepa
  • 2 cups warm milk
  • 2 tbsp butter melted
  • 0.5 tsp salt
Cheese Filling
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup queso fresco shredded
For Cooking
  • 1 tbsp butter or oil

Equipment

  • Mixing bowl
  • Skillet or griddle
  • Spatula
  • Measuring cups

Method
 

  1. Combine warm milk, melted butter, and salt in a bowl.
  2. Gradually mix in cornmeal until a soft dough forms.
  3. Let dough rest for 5 minutes.
  4. Divide dough into 8 portions and flatten into discs.
  5. Place shredded cheese in the center and seal the dough around it.
  6. Shape into patties about 1/2 inch thick.
  7. Heat butter or oil in a skillet over medium heat.
  8. Cook arepas 4–5 minutes per side until golden brown.
  9. Cook a few extra minutes to ensure cheese melts inside.

Notes

For extra flavor, brush arepas with butter after cooking and serve hot with fresh cheese or avocado.
