Cookies and Cream Cinnamon Rolls

Soft cinnamon rolls swirled with crushed cookies and topped with a creamy glaze.

Ingredients
  

Dough
  • 4 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 2 tsp instant yeast
  • 1 cup warm milk
  • 0.5 cup unsalted butter softened
  • 1 egg large
  • 0.5 tsp salt
Filling
  • 0.5 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 2 tsp ground cinnamon
  • 1 cup crushed chocolate sandwich cookies
Cream Cheese Glaze
  • 4 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 0.5 cup extra crushed cookies for topping

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. In a large mixing bowl, combine warm milk and yeast until foamy.
  2. Add sugar, softened butter, egg, salt, and flour. Mix until a soft dough forms.
  3. Knead dough on a floured surface for 8–10 minutes until smooth.
  4. Place dough in a greased bowl, cover, and let rise until doubled.
  5. Mix filling ingredients and spread over rolled dough.
  6. Roll dough into a log and cut into 12 rolls.
  7. Let rolls rise again for 30–45 minutes.
  8. Bake at 350°F (175°C) for 20–25 minutes until golden.
  9. Beat cream cheese and butter, add powdered sugar and vanilla for glaze.
  10. Spread glaze over warm rolls and top with extra crushed cookies.

Notes

Best served warm. Store leftovers in an airtight container.
