Dip Base
  • 2 cups cottage cheese full fat or low fat
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.5 cup salsa mild or medium
  • 2 tbsp taco seasoning
  • 2 green onions chopped
  • 1 tomato small, diced
  • 1 bell pepper small, diced
  • 1 tbsp cilantro optional, chopped
  • 0.5 tsp paprika for garnish

Method
 

  1. In a medium mixing bowl, combine cottage cheese, shredded cheddar, and sour cream until smooth.
  2. Add taco seasoning and salsa; mix well to evenly distribute flavors.
  3. Fold in green onions, diced tomato, and bell pepper for freshness.
  4. Refrigerate covered for at least 30 minutes to allow flavors to meld.
  5. Garnish with cilantro and paprika before serving.
  6. Serve chilled with tortilla chips or fresh vegetables.

Notes

Can be made a day ahead for convenience. Adjust spice level based on salsa choice.
