Ingredients
  

Soup
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 cup wild rice
  • 6 cups vegetable broth
  • 1 cup milk or cream

Equipment

  • Wooden spoon

Method
 

  1. Sauté onion, carrots, and celery in butter and oil.
  2. Add garlic and mushrooms; cook until softened.
  3. Stir in wild rice and broth with herbs.
  4. Simmer until wild rice is tender.
  5. Stir in milk or cream and season.

Notes

Add cream at the end for best texture.
