Salmon Bake
  • 1 pound salmon fillets skin removed
  • 12 ounces pasta shells or penne
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1 small onion diced
  • 2 cups spinach
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 1 tbsp fresh parsley chopped
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Cook pasta until al dente according to package directions. Drain and set aside.
  3. Season salmon with paprika, salt, and pepper.
  4. Heat olive oil in a skillet and cook salmon for 3-4 minutes per side. Flake into chunks.
  5. Melt butter in the same skillet and sauté onion until soft.
  6. Add garlic and spinach, cooking until spinach wilts.
  7. Pour in heavy cream and chicken broth. Simmer gently for several minutes.
  8. Stir in Italian seasoning, Parmesan cheese, and half the mozzarella cheese.
  9. Mix pasta and salmon into the sauce until evenly coated.
  10. Transfer mixture to baking dish, top with remaining mozzarella cheese, and bake 20-25 minutes until golden and bubbly.

Notes

For extra flavor, add lemon zest or crispy bacon. Best served warm with garlic bread or salad.
