Ingredients
  

Pasta
  • 16 oz elbow macaroni
  • 2 cups cooked shredded chicken
Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 cup buffalo sauce
  • 8 oz cream cheese softened
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook macaroni according to package directions until al dente. Drain and set aside.
  3. Melt butter in a saucepan over medium heat and whisk in flour.
  4. Slowly whisk in milk and heavy cream until smooth and slightly thickened.
  5. Add cream cheese and stir until melted.
  6. Mix in buffalo sauce, cheddar cheese, mozzarella cheese, and seasonings until creamy.
  7. Fold cooked macaroni and shredded chicken into the sauce.
  8. Transfer mixture to baking dish and bake for 15-20 minutes until bubbly.

Notes

Add crispy bacon, blue cheese crumbles, or breadcrumbs for extra flavor and texture. Store leftovers refrigerated for up to 4 days.
