  • 1 lb potato gnocchi
  • 12 oz Italian sausage crumbled
  • 2 cups butternut squash peeled and cubed
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese grated
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried thyme

Method
 

  1. Cook gnocchi in salted boiling water according to package instructions and drain.
  2. Heat olive oil in a large skillet over medium heat and brown the sausage.
  3. Add cubed butternut squash and cook until tender.
  4. Stir in garlic, thyme, salt, and pepper and cook for 1 minute.
  5. Pour in chicken broth and heavy cream and simmer for 5 minutes.
  6. Stir in parmesan cheese until melted.
  7. Add cooked gnocchi and toss gently to coat in sauce.
  8. Simmer for 2–3 minutes and serve warm with fresh herbs.

Notes

Add spinach or mushrooms for extra flavor. Serve with garlic bread or salad.
