Method
- Cook gnocchi in salted boiling water according to package instructions and drain.
- Heat olive oil in a large skillet over medium heat and brown the sausage.
- Add cubed butternut squash and cook until tender.
- Stir in garlic, thyme, salt, and pepper and cook for 1 minute.
- Pour in chicken broth and heavy cream and simmer for 5 minutes.
- Stir in parmesan cheese until melted.
- Add cooked gnocchi and toss gently to coat in sauce.
- Simmer for 2–3 minutes and serve warm with fresh herbs.
Notes
Add spinach or mushrooms for extra flavor. Serve with garlic bread or salad.
