Ingredients
  

Chicken and Rice
  • 2 chicken breasts large
  • 1 cup wild rice blend
  • 3 cups chicken broth
  • 1 small onion diced
  • 4 cloves garlic minced
  • 2 tbsp butter
  • 1 tbsp olive oil
Cream Sauce
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 tsp dried thyme
  • 1 tsp parsley
  • salt to taste
  • black pepper to taste

Method
 

  1. Cook wild rice in chicken broth according to package directions.
  2. Season chicken with salt, pepper, thyme, and Italian seasoning.
  3. Heat butter and olive oil in a skillet over medium heat.
  4. Cook chicken until golden and fully cooked, then remove and slice.
  5. Sauté onion until soft, then add garlic and cook briefly.
  6. Pour in cream and stir in parmesan cheese until smooth.
  7. Mix cooked rice into the creamy sauce.
  8. Return chicken to skillet and serve warm.

Notes

Add mushrooms or spinach for extra flavor and nutrition. Reheat with a splash of broth for best texture.
