- Heat olive oil in a large skillet over medium-high heat and cook chicken until golden and fully cooked. Remove and set aside.
- Melt butter in the same skillet and sauté garlic until fragrant.
- Add chicken broth and heavy cream, stirring to combine.
- Season with Italian seasoning, salt, and pepper, then bring to a gentle simmer.
- Add gnocchi and cook until tender, about 4–5 minutes.
- Return chicken to the skillet and mix well.
- Stir in parmesan cheese until melted and creamy.
- Add spinach and cook until wilted. Garnish with parsley and serve hot.
