Ingredients
  

Soup
  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 16 oz gnocchi
  • 2 cups spinach
  • 0.5 tsp red pepper flakes optional
  • 0.5 tsp Italian seasoning
  • salt to taste
  • black pepper to taste
  • 0.5 cup Parmesan cheese grated

Equipment

  • Wooden spoon

Method
 

  1. Heat oil and cook sausage until browned.
  2. Add onion and cook until soft.
  3. Stir in garlic and cook briefly.
  4. Pour in broth and bring to simmer.
  5. Add gnocchi and cook until tender.
  6. Stir in cream and seasoning.
  7. Add spinach and cook until wilted.
  8. Season and stir in Parmesan.
  9. Serve hot.

Notes

Do not overcook gnocchi. Add extra broth when reheating if needed.
