Ingredients
  

Chicken
  • 2 large chicken breasts diced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
Orzo Skillet
  • 1 tbsp butter
  • 4 cloves garlic minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 0.33 cup sun-dried tomatoes chopped
  • 2 cups baby spinach

Equipment

  • Large skillet

Method
 

  1. Season and cook chicken until golden brown.
  2. Remove chicken and sauté garlic in butter.
  3. Toast orzo briefly.
  4. Add broth and sun-dried tomatoes; simmer until orzo is tender.
  5. Stir in cream and parmesan.
  6. Add spinach and cooked chicken.
  7. Heat through and garnish before serving.

Notes

Add extra broth if needed while reheating leftovers.
