Ingredients
  

Pasta
  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 16 oz mushrooms sliced
  • 4 garlic cloves minced
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 0.5 cup pasta water reserved
  • 2 tbsp fresh parsley chopped

Equipment

  • Large pot
  • Large skillet
  • Colander
  • Wooden spoon

Method
 

  1. Cook spaghetti in salted boiling water until al dente.
  2. Reserve pasta water and drain spaghetti.
  3. Heat olive oil and butter in a skillet over medium heat.
  4. Cook mushrooms until golden brown and tender.
  5. Add garlic and Italian seasoning.
  6. Season with salt and black pepper.
  7. Pour in heavy cream and simmer gently.
  8. Stir in parmesan cheese until smooth.
  9. Add pasta water as needed for sauce consistency.
  10. Toss spaghetti into the sauce until fully coated.
  11. Garnish with parsley and extra parmesan before serving.

Notes

For extra richness, drizzle with truffle oil before serving. Best enjoyed fresh and hot.
