Chicken Rice Bake
  • 2 chicken breasts cubed
  • 1.5 cups long grain rice uncooked
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese freshly grated
  • 1 cup mozzarella cheese shredded
  • 4 garlic cloves minced
  • 1 small onion diced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped

  • Skillet

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Cook onion in butter and olive oil until softened. Add garlic and cook briefly.
  3. Add chicken and seasonings. Cook until lightly browned.
  4. Add rice to baking dish and pour in chicken broth and heavy cream.
  5. Add chicken mixture and parmesan cheese. Stir gently.
  6. Cover with foil and bake 35 minutes.
  7. Remove foil, top with mozzarella cheese, and bake uncovered until bubbly and golden.
  8. Rest 5 minutes, garnish with parsley, and serve warm.

Notes

Fresh parmesan creates the creamiest texture and best flavor.
