Ingredients
  

Roasted Garlic
  • 2 garlic heads
  • 2 tbsp olive oil
  • 0.5 tsp salt
Creamy Sauce
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg optional

Method
 

  1. Roast garlic until soft and golden.
  2. Melt butter and olive oil in a skillet.
  3. Mash roasted garlic and add to skillet.
  4. Pour in cream and simmer gently.
  5. Stir in Parmesan until smooth.
  6. Add lemon juice, zest, and seasoning.
  7. Toss with pasta and serve warm.

Notes

Add pasta water to adjust consistency. Serve immediately for best texture.
