  • 1 lb potato gnocchi
  • 2 chicken breasts sliced
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese freshly grated
  • 1 cup spinach chopped
  • 0.5 cup sun-dried tomatoes sliced
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 2 tbsp fresh basil for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with paprika, Italian seasoning, salt, and black pepper.
  3. Cook chicken until golden brown and fully cooked, then remove and set aside.
  4. Melt butter in the skillet and sauté garlic until fragrant.
  5. Add sun-dried tomatoes and cook for 1 minute.
  6. Pour in chicken broth and heavy cream, stirring well.
  7. Add gnocchi directly into the skillet and simmer until tender.
  8. Stir in parmesan cheese until melted and creamy.
  9. Add spinach and cook until wilted.
  10. Return chicken to skillet and coat in sauce before serving.

Notes

Fresh parmesan cheese creates the smoothest sauce. Add extra broth if the sauce thickens too much while reheating.
