- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with paprika, Italian seasoning, salt, and black pepper.
- Cook chicken until golden brown and fully cooked, then remove and set aside.
- Melt butter in the skillet and sauté garlic until fragrant.
- Add sun-dried tomatoes and cook for 1 minute.
- Pour in chicken broth and heavy cream, stirring well.
- Add gnocchi directly into the skillet and simmer until tender.
- Stir in parmesan cheese until melted and creamy.
- Add spinach and cook until wilted.
- Return chicken to skillet and coat in sauce before serving.
Notes
Fresh parmesan cheese creates the smoothest sauce. Add extra broth if the sauce thickens too much while reheating.
