  • 1 lb cheese ravioli
  • 2 chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 cup fresh spinach
  • 0.5 cup sun-dried tomatoes sliced
  • salt to taste
  • black pepper to taste

Method
 

  1. Cook the ravioli according to package instructions, then drain and set aside.
  2. Season chicken with paprika, Italian seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet and cook chicken until golden and fully cooked.
  4. Remove chicken and melt butter in the same skillet. Add garlic and sauté briefly.
  5. Pour in chicken broth and heavy cream, stirring until combined.
  6. Whisk in parmesan cheese until the sauce becomes creamy and smooth.
  7. Add spinach and sun-dried tomatoes, cooking until spinach wilts.
  8. Return chicken to the skillet and stir well.
  9. Add cooked ravioli and toss gently in the sauce.
  10. Simmer briefly, garnish with basil and parmesan, then serve warm.

Notes

Freshly grated parmesan creates the smoothest sauce texture. Add crushed red pepper flakes for extra heat if desired.
