- Season chicken with salt and pepper.
- Sear chicken in olive oil over medium-high heat until golden and cooked through; remove and set aside.
- Sauté garlic in butter, then add chicken broth and scrape browned bits.
- Stir in cream, parmesan, and sun-dried tomatoes; simmer until slightly thickened.
- Add spinach and cook until wilted.
- Return chicken to skillet and spoon sauce over; simmer 2 minutes.
- Serve immediately.
