Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup parmesan cheese grated
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • to taste salt and black pepper
  • optional red pepper flakes for heat

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil over medium-high heat until golden and cooked through; remove and set aside.
  3. Sauté garlic in butter, then add chicken broth and scrape browned bits.
  4. Stir in cream, parmesan, and sun-dried tomatoes; simmer until slightly thickened.
  5. Add spinach and cook until wilted.
  6. Return chicken to skillet and spoon sauce over; simmer 2 minutes.
  7. Serve immediately.

Notes

Garnish with fresh parsley or basil for added flavor.
