French Toast Base
  • 1 loaf brioche bread thick sliced
  • 5 eggs large
  • 1 cup heavy cream
  • 0.5 cup whole milk
  • 0.75 cup granulated sugar divided
  • 2 tbsp brown sugar
  • 1 tbsp vanilla extract

Method
 

  1. Butter a baking dish and arrange bread inside.
  2. Whisk custard ingredients until smooth.
  3. Pour custard over bread and refrigerate overnight.
  4. Bake until puffed and golden.
  5. Sprinkle sugar and torch until caramelized.

Notes

Best served immediately after caramelizing sugar.
