Ingredients
  

Egg Salad
  • 6 eggs large
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 0.25 cup celery finely chopped
  • 2 tbsp red onion finely chopped
  • salt and pepper to taste
Crispy Topping
  • 0.5 cup panko breadcrumbs
  • 1 tbsp butter or olive oil
  • paprika pinch

Method
 

  1. Boil eggs, cool, peel, and chop.
  2. Mix mayonnaise, mustard, lemon juice, and seasoning.
  3. Combine eggs with celery and onion.
  4. Toast breadcrumbs in butter until crispy.
  5. Mix half into salad and sprinkle rest on top.

Notes

Add crispy topping just before serving to keep texture crunchy.
