Ingredients
  

Rice Balls
  • 3 cups cooked rice cold
  • 1.5 cups mozzarella cheese
  • 0.5 cup Parmesan cheese
  • 2 eggs
  • 0.5 cup flour
  • 1.5 cups breadcrumbs

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Mix rice with seasonings and one egg.
  2. Stuff with mozzarella and form balls.
  3. Coat in flour, egg, and breadcrumbs.
  4. Fry at 350°F until golden brown.
  5. Drain and serve hot.

Best served immediately for maximum cheese pull.
