Zucchini Fritter Ingredients
  • 2 medium zucchini grated
  • 1 tsp salt for draining zucchini
  • 2 eggs large
  • 0.5 cup all-purpose flour
  • 0.5 cup grated Parmesan cheese
  • 2 green onions finely sliced
  • 2 cloves garlic minced
  • 0.25 tsp black pepper
  • olive oil for frying
  • optional herbs parsley or dill for garnish

Method
 

  1. Place grated zucchini in a colander and sprinkle with salt. Let sit 10 minutes.
  2. Squeeze zucchini in a clean towel to remove excess liquid.
  3. In a bowl, mix zucchini, eggs, flour, Parmesan, green onions, garlic, and black pepper until combined.
  4. Heat a skillet over medium heat with enough olive oil to coat the bottom.
  5. Scoop mixture into the skillet and flatten slightly to form fritters.
  6. Cook 3–4 minutes per side until golden brown and crispy.
  7. Transfer to a paper towel-lined plate and serve warm, garnished with herbs if desired.

Notes

Squeeze zucchini very well to prevent soggy fritters. Serve immediately for best crispiness.
