Ingredients
  

Chicken Stew
  • 1.5 lbs boneless, skinless chicken breasts
  • 3 carrots peeled and diced
  • 2 celery stalks diced
  • 1 onion diced
  • 3 cups chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried parsley
Dumplings
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 2 tbsp unsalted butter melted
  • 0.75 cup milk

  • Crock pot / slow cooker
  • Mixing bowls
  • Forks for shredding chicken

Method
 

  1. Place chicken, carrots, celery, and onion in the crock pot. Pour in broth and add salt, pepper, thyme, and parsley.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  3. Remove chicken, shred with forks, and return to crock pot.
  4. In a bowl, combine flour, baking powder, and salt. Stir in melted butter and milk to form soft dough.
  5. Drop spoonfuls of dumpling dough on top of simmering chicken. Cover and cook on high for 30–40 minutes until dumplings are cooked.
  6. Serve hot, garnished with fresh parsley.

Notes

Leftovers store up to 3 days. Reheat gently on stovetop to maintain dumpling texture.
