Ingredients
  

Burgers
  • 1 lb ground beef 80/20 for best flavor
  • 4 croissants split
  • 4 slices cheddar cheese
  • 1 onion thinly sliced
  • 1 tbsp butter for caramelizing onions
  • Salt and pepper to taste
Special Sauce
  • 0.25 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 tsp pickle juice
  • Pinch smoked paprika

Equipment

  • Cast iron skillet or griddle
  • Mixing bowls

Method
 

  1. Caramelize onions in butter over medium heat for 12-15 minutes.
  2. Mix mayonnaise, Dijon mustard, ketchup, pickle juice, and smoked paprika in a small bowl.
  3. Preheat skillet or griddle over medium-high heat and lightly oil.
  4. Form ground beef into balls, place on skillet, and smash into thin patties. Season with salt and pepper.
  5. Cook 2-3 minutes per side until edges are browned. Add cheddar slice on second side and melt.
  6. Assemble burgers with sauce, lettuce, tomato, caramelized onions, and pickles on croissant halves.
  7. Serve immediately with fries or side salad.

Notes

Serve croissants lightly toasted for extra crispiness.
