Cookie Batter
  • 6 oz dark chocolate 70% cocoa, chopped
  • 4 tbsp unsalted butter
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 eggs large, room temperature
  • 1 tsp vanilla extract
  • 0.75 cup all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tsp espresso powder
  • 0.5 tsp baking powder
  • 0.5 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Melt dark chocolate and butter together until smooth.
  3. Whisk dry ingredients together in a bowl.
  4. Beat eggs and sugars until thick and glossy.
  5. Fold melted chocolate into egg mixture.
  6. Gently fold in dry ingredients.
  7. Scoop batter and bake until crackled and soft in center.

Notes

Do not overbake. Centers should look slightly underdone when removed from oven.
