  • 4 chicken thighs bone-in
  • 1 cup long grain rice washed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 1 cup coconut milk optional
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp thyme
  • 0.5 tsp allspice
  • 1 tsp salt

Method
 

  1. Heat oil and sear seasoned chicken until golden.
  2. Remove chicken and sauté onion, garlic, and pepper.
  3. Add tomato paste and rice, stir well.
  4. Pour in liquids and spices.
  5. Return chicken, cover, and simmer.
  6. Cook until rice is tender and chicken is done.

Notes

Add lime juice before serving for extra freshness.
