Chia Pudding Base
  • 0.5 cup chia seeds
  • 2 cups coconut milk
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
Mango Layer
  • 1.5 cups fresh mango divided

Method
 

  1. Whisk coconut milk, sweetener, and vanilla.
  2. Stir in chia seeds and refrigerate until thickened.
  3. Blend mango into puree.

Notes
