Ingredients
  

Mash
  • 2 lb Yukon Gold potatoes peeled and cubed
  • 2 large carrots peeled and chopped
  • 1 large apple peeled, cored, and chopped
  • 1 cup apple cider
  • 3 tbsp unsalted butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp ground cinnamon optional
  • 2 tbsp fresh parsley chopped, for garnish

Equipment

  • Large pot
  • Potato masher
  • Cutting board
  • Knife

Method
 

  1. Peel and cube potatoes, carrots, and apple.
  2. Place potatoes and carrots in a large pot with water and pinch of salt, simmer 15–20 minutes until tender.
  3. Drain vegetables, return to pot, add butter, apple, and a splash of apple cider, mash until smooth.
  4. Season with salt, black pepper, and cinnamon, stir well.
  5. Transfer to serving bowl, drizzle with remaining apple cider, garnish with parsley.

Notes

Add roasted garlic or sautéed onions for a deeper flavor profile.
