Ingredients
  

Salad
  • 1 head iceberg lettuce finely chopped
  • 1 head romaine lettuce finely chopped
  • 1 cup salami thinly sliced and chopped
  • 1 can chickpeas drained and rinsed
  • 1 cup mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
Dressing
  • 0.33 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • 0.25 tsp black pepper
  • 0.5 tsp salt

Method
 

  1. Wash and dry iceberg and romaine lettuce thoroughly.
  2. Finely chop the lettuce into small bite-sized pieces.
  3. Add lettuce to a large salad bowl.
  4. Mix in chopped salami, chickpeas, mozzarella cheese, and Parmesan cheese.
  5. Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and black pepper.
  6. Pour dressing over salad ingredients.
  7. Toss thoroughly until evenly coated.
  8. Serve immediately for best texture and freshness.

Notes

For extra flavor, add avocado, cherry tomatoes, or banana peppers. Keep dressing separate until serving for maximum crunch.
