Pork Loin
  • 1 pork loin 3-4 pounds
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
French Onion Filling
  • 3 yellow onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp balsamic vinegar
  • 1 cup Gruyère cheese shredded
  • 0.5 cup mozzarella cheese

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat butter and olive oil in a skillet over medium-low heat.
  3. Cook onions with salt and pepper for 30-40 minutes until caramelized.
  4. Add garlic, thyme, and balsamic vinegar. Cook 2 minutes more.
  5. Butterfly pork loin and pound to even thickness.
  6. Season pork with olive oil, garlic powder, onion powder, salt, and pepper.
  7. Spread caramelized onions and cheeses evenly over pork.
  8. Roll pork tightly and secure with kitchen twine.
  9. Roast for 60-75 minutes until internal temperature reaches 145°F.
  10. Rest pork 10-15 minutes before slicing and serving.

Notes

Allow the pork loin to rest before slicing to keep the meat juicy and flavorful. Serve with pan sauce or roasted vegetables.
