Ingredients
  

Chicken Marinade
  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 3 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 2 garlic cloves minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Stack Ingredients
  • 2 cups cooked rice
  • 2 avocados sliced
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 0.25 cup cilantro chopped
  • 2 lime wedges for serving

Equipment

Method
 

  1. Whisk together olive oil, honey, lime juice, lime zest, garlic, paprika, chili powder, salt, and pepper.
  2. Marinate chicken in the mixture for at least 30 minutes.
  3. Heat a grill pan or skillet over medium-high heat.
  4. Cook chicken for 5–6 minutes per side until fully cooked.
  5. Allow chicken to rest before slicing.
  6. Arrange cooked rice onto serving plates.
  7. Layer shredded lettuce over rice.
  8. Top with sliced chicken, avocado, and tomatoes.
  9. Garnish with cilantro and lime wedges.
  10. Serve immediately while fresh and warm.

Notes

For extra flavor, drizzle additional honey lime sauce over the stacks before serving. Great for meal prep and healthy lunches.
