Chicken
  • 4 chicken breasts boneless skinless
  • 1 tsp paprika
  • 2 tbsp olive oil
Filling
  • 2 tbsp butter
  • 2 cups mushrooms finely chopped
  • 3 cloves garlic minced
  • 0.5 cup cream cheese softened
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut pockets into chicken breasts and season with salt, pepper, and paprika.
  3. Sauté mushrooms in butter, add garlic and herbs, then mix with cheeses.
  4. Stuff chicken with mushroom mixture and secure if needed.
  5. Sear chicken 2-3 minutes per side until golden.
  6. Bake 20-25 minutes until internal temperature reaches 165°F.
