Ingredients
  

Pork Chops
  • 4 bone-in pork chops 1 to 1½ inches thick
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
Garlic Butter
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 5 cloves garlic smashed
  • 2 sprigs fresh thyme or rosemary

Equipment

  • Cast iron skillet
  • Tongs
  • Meat thermometer

Method
 

  1. Bring pork chops to room temperature and pat dry.
  2. Season both sides with salt, pepper, smoked paprika, and garlic powder.
  3. Heat skillet over medium-high heat and add olive oil.
  4. Sear pork chops 3–4 minutes per side until golden.
  5. Reduce heat, add butter, garlic, and herbs.
  6. Baste pork chops until internal temperature reaches 145°F.
  7. Rest pork chops for 5 minutes before serving.

Resting the pork chops ensures maximum juiciness. Serve immediately.
