Ingredients
  

Potatoes
  • 1.5 lbs baby potatoes halved if large
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • parsley for garnish

Equipment

  • Large pot
  • Skillet
  • Colander
  • Wooden spoon

Method
 

  1. Boil potatoes until tender and drain.
  2. Heat oil and butter in skillet and sauté garlic.
  3. Add cream and bring to a simmer.
  4. Stir in cheese and seasoning.
  5. Add potatoes and coat in sauce.
  6. Simmer until thickened and garnish before serving.

Notes

Best served fresh. Add extra cheese or herbs for variation.
