Ingredients
  

Potato Stacks
  • 4 russet potatoes thinly sliced
  • 4 cloves garlic minced
  • 4 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • 0.5 cup Parmesan cheese grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp fresh thyme chopped

  • Muffin tin
  • Mandoline slicer
  • Oven

Method
 

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Thinly slice potatoes using a mandoline or sharp knife.
  3. Melt butter with olive oil and garlic over low heat.
  4. Toss potato slices with garlic butter, salt, pepper, and thyme.
  5. Stack slices and place into muffin cups.
  6. Sprinkle Parmesan on top of each stack.
  7. Cover with foil and bake 35 minutes.
  8. Remove foil and bake 25 minutes until golden and crisp.

Notes

Use a mandoline for best results and uniform crisping.
