Method
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Thinly slice potatoes using a mandoline or sharp knife.
- Melt butter with olive oil and garlic over low heat.
- Toss potato slices with garlic butter, salt, pepper, and thyme.
- Stack slices and place into muffin cups.
- Sprinkle Parmesan on top of each stack.
- Cover with foil and bake 35 minutes.
- Remove foil and bake 25 minutes until golden and crisp.
Notes
Use a mandoline for best results and uniform crisping.
