Ingredients
  

Mousse Base
  • 1.5 cups heavy cream
  • 4 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 2 tbsp molasses
  • 0.25 cup espresso cooled
  • 1 tsp ginger ground
  • 1 tsp cinnamon ground
  • 0.25 tsp nutmeg
  • 1 packet unflavored gelatin
  • 3 tbsp water cold

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Silicone dome molds
  • Spatula

Method
 

  1. Bloom gelatin in cold water.
  2. Dissolve gelatin into warm espresso and cool.
  3. Beat cream cheese, sugar, and molasses until smooth.
  4. Add spices and espresso mixture.
  5. Whip cream to soft peaks.
  6. Fold whipped cream into base.
  7. Fill molds and chill until set.

Notes

Allow full chill time for clean unmolding.
