  • 3 tbsp molasses
  • 1 tsp ground ginger
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground nutmeg

Method
 

  1. Crush gingerbread cookies into fine crumbs.
  2. Mix cookie crumbs with cream cheese, molasses, and spices until smooth.
  3. Roll mixture into bite-sized balls.
  4. Chill truffles for 30 minutes.
  5. Optionally coat with chocolate or powdered sugar.
  6. Let set in refrigerator before serving.
