Ingredients
  

Gingerbread Cookies
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp cloves
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar
  • 0.5 cup molasses
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup milk
Cream Filling
  • 0.5 cup cream cheese softened
  • 0.25 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Whisk flour, baking soda, salt, and spices together.
  3. Cream butter and brown sugar until fluffy.
  4. Add molasses, egg, and vanilla and mix well.
  5. Alternate adding dry ingredients and milk.
  6. Scoop batter onto baking sheets.
  7. Bake until set and springy.
  8. Cool completely.
  9. Beat filling ingredients until smooth.
  10. Sandwich cookies with filling.
