Ingredients
  

Salad Base
  • 400 g elbow macaroni
  • 2 stalks celery finely diced
  • 0.5 red onion finely chopped
Dressing
  • 1 cup mayonnaise full-fat
  • 1.5 tbsp Dijon mustard
  • 1 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 2 tbsp olive oil
  • salt and black pepper to taste

Equipment

  • Large pot
  • Mixing bowls
  • Colander
  • Whisk

Method
 

  1. Cook macaroni in salted boiling water until al dente. Drain and cool.
  2. Whisk mayonnaise, mustard, lemon juice, zest, and olive oil until smooth.
  3. Combine pasta with celery and red onion.
  4. Fold dressing into pasta mixture until evenly coated.
  5. Season to taste and chill before serving.

Notes

For best flavor, chill for at least 30 minutes before serving and re-season just before serving.
