Ingredients
  

Chicken and Bowls
  • 2 boneless skinless chicken breasts
  • 2 cups cooked rice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 0.5 red onion sliced
  • 0.5 cup kalamata olives
  • 0.5 cup feta cheese crumbled
  • 2 cups romaine lettuce chopped
  • fresh parsley for garnish
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cucumber grated
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill
  • salt and pepper to taste

Method
 

  1. Combine garlic powder, paprika, oregano, onion powder, salt, and pepper.
  2. Season chicken breasts evenly with spice mixture.
  3. Heat olive oil in a skillet and cook chicken until golden and fully cooked.
  4. Allow chicken to rest before slicing.
  5. Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper for tzatziki sauce.
  6. Prepare vegetables and toppings.
  7. Divide rice between bowls or meal prep containers.
  8. Top with chicken, vegetables, olives, lettuce, and feta cheese.
  9. Drizzle with tzatziki sauce and garnish with parsley before serving.

Notes

Store tzatziki separately for best freshness during meal prep. Great with quinoa or cauliflower rice substitutions.
