Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 0.5 cup breadcrumbs
  • 1 egg
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp lemon zest
  • 1 tbsp olive oil for cooking
Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cucumber grated, excess water squeezed out
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped
  • 1 tsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Refrigerate.
  2. Combine ground chicken, onion, garlic, breadcrumbs, egg, parsley, oregano, salt, pepper, and lemon zest in a bowl.
  3. Form mixture into 1.5-inch meatballs.
  4. Cook meatballs in olive oil skillet over medium heat 2–3 minutes per side, then 8–10 minutes until cooked through or bake at 400°F (200°C) for 15–18 minutes.
  5. Serve meatballs with tzatziki, garnish with dill and lemon wedges.

Notes

Can make mini meatballs for appetizers or party trays.
