Ingredients
  

Dough
  • 4 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 2 tsp salt
  • 1.75 cups warm water
  • 0.25 cup olive oil
Topping
  • 1.5 cups Gruyère cheese grated
  • 2 tbsp fresh thyme leaves
  • 2 tbsp olive oil for drizzling
  • flaky sea salt to taste

Method
 

  1. Combine warm water and yeast and let sit until foamy.
  2. Mix in flour, salt, and olive oil until a sticky dough forms.
  3. Let dough rise until doubled in size.
  4. Stretch dough into oiled pan and dimple surface.
  5. Top with olive oil, Gruyère, thyme, and salt.
  6. Bake until golden and bubbly.
