Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 1 tsp butter extract
  • 1 package butterscotch pudding mix instant
  • 1 cup butterscotch chips
  • 0.5 cup white chocolate chips
Butterbeer Frosting
  • 0.5 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tbsp cream soda
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt.
  3. Beat butter, brown sugar, and granulated sugar until fluffy.
  4. Mix in eggs, vanilla extract, and butter extract.
  5. Add butterscotch pudding mix and combine thoroughly.
  6. Gradually mix dry ingredients into wet ingredients.
  7. Fold in butterscotch chips and white chocolate chips.
  8. Scoop dough onto baking sheets and bake for 10-12 minutes.
  9. Cool cookies completely before frosting.
  10. Prepare frosting by beating butter, powdered sugar, cream soda, and vanilla until smooth.
  11. Frost cookies and decorate as desired.

For extra magical flavor, drizzle caramel sauce over the frosted cookies before serving.
